Sweet fall baking with these yummy banana quark balls

Now fall has made its entrance and the weather is getting less nice, it’s time for some sweet baking sessions again girlies! Don’t you just love that smell of homemade goods while you enjoy being cozy at home? Today’s recipe blog post is a special edition as it involves yummy banana quark balls from a fellow foodie!

A recipe from a fellow foodie, who could it be? Well these ultimate banana quark balls are from the lovely Mariette from Zoetrecepten! This is actually a recipe from her new book Puur Zoet, so you’re getting a sneak peek, how awesome is that?! Her book contains easy sweet baking recipes in a healthy way. All the recipes contain nutritious ingredients that you can find simply at your local supermarket. Plus it has lots of gluten and lactose free options so it’s fitted for anyone who needs this. And yes, this recipe gives a lactose free option as well!

These banana quark balls kind of remind me of oliebollen which are the guilty pleasure of most Dutchies during winter time. Though only from the outside, because these balls are way different when it comes to the inside.

It’s a real easy and fast recipe, so don’t wait any longer and start baking!

INGREDIENTS 

– 125 g spelt flour
– 125 g full fat quark OR coconut yoghurt
– 2 tsp. baking powder
– 1 egg
– 1 tbsp. vegetable oil
– pinch of salt
– 3 small bananas
– 2 tsp. cinnamon
– optional: milk by choice

MACRONUTRIENTS PER PORTION

Energy: 167,3 kcal
Carbs: 29 g
Protein: 6,7 g
Fat: 3,9 g
Fiber: 3,8 g

METHOD

  1. Preheat the oven to 160 degrees Celsius.
  2. Take a mixer with dough hooks and mix the spelt flour with the quark, baking powder, egg, oil and salt.
  3. Mash 1 small banana (about 80 grams) and mix this through the dough.
  4. Cut the remaining bananas into slices and roll those through the cinnamon. Gently stir the slices through the dough.
  5. Grab an oven plate and cover it with baking paper. Use two spoons to make balls from the mixture and lay them on the oven plate.
  6. To give the balls a shiny look you can cover them with a little layer of plant based milk.
  7. Bake the banana quark balls golden brown in about 20 minutes (depending on the size).

TIP: You can save the banana quark balls for 3 days in a solid bin or 3 months in the freezer.
