To all the chocoholics: healthy chocolate cake

Oh yeah girls, it’s baking time with one of my favorite ingredients: cacao! As you probably already know, I looove me some chocolate and no! I couldn’t live without. Did you know raw cacao actually has several health benefits? Using raw cacao powder is better than the regular processed cocoa powder, but either one is fine for making this fi-fa-fabulous healthy chocolate cake.

When it comes to baking cakes, cookies and other snacks I always use healthy and clean ingredients, so that it fits my healthy diet. Bananas are a great way for sweetening and moisturizing your cake, sooo much better than the refined sugar and butter that are normally used in cakes. When baking with only healthy ingredients you don’t have to worry about your figure when enjoying some of this pure chocolate goodness. A healthy chocolate cake like this is great for some guilt-free snacking or for breakfast to start your day powerful! Adding cacao powder and cacao nibs to the cake makes it a little extra special (and crunchy!) for all the real chocoholics – like me! :-p

 

INGREDIENTS

– 100 g almond flour
– 50 g oatmeal
– 2 ½ bananas
– 4 eggs
– some soy milk (coconut, almond, or whatever milk you prefer is fine too)
I prefer to use around 4-5 tbspn soy milk, but you can also make this chocolate cake without milk.
– 50 g cacao powder
– 2 tsp baking powder
– pinch of salt
– 3 tbspn coconut oil
– cacao nibs – to taste
– crumbled walnuts – to taste

MACRONUTRIENTS

  • Energy: 144 kcal
  • Protein: 5 g
  • Carbs: 11,3 g
  • Fat: 10,4 g
  • Fiber: 3,6 g

METHOD

  1. Preheat your oven to 180 degrees Celsius.
  2. Set up your blender and put in the eggs and milk. Cut the bananas into pieces and add those too. Blend briefly.
  3. Now that you’ve got yourself a basic mixture, add the next ingredients: almond flour, oatmeal, cacao powder, baking powder and salt. Blend until you got a smooth mixture.
  4. Finally add the cacao nibs and walnuts (crumble them by hand first) to the mixture and stir with a spoon till it’s divided evenly.
  5. Grab a cake baking mold and grease with some coconut oil or baking spray if you don’t have coconut oil at home. Pour the mixture in the baking mold and decorate with some extra cacao nibs and crumbled walnuts on top.
  6. Bake for about 40 -45 minutes. Check if your cake is ready by pricking with a sate stick: when it comes out dry and ‘clean’, your cake is perfect!
  7. Let the cake cool down on a cake rack for a little while, cut yourself a slice or two and then it’s time for some yummy snacking!

TIP: Finish your healthy chocolate cake with some extra honey, Nutella or banana slices!

      Ik heb er toevallig net zelf weer 1 in de oven geplaatst 🙂 En dan zometeen proberen netjes wat plakken in de vriezer te plaatsen ipv alles meteen opeten hihi

    Dit ziet er heerlijk uit, zeker voor iemand die geen suiker eet.
    Is er een mogelijkheid om banaan te vervangen met iets anders? Ik ben er namelijk allergisch voor.
