Morning vanilla overnight oats with cookie dough

Do you feel like having a healthy and super tasteful breakfast, but don’t want to get up earlier to make this? Then I’ve got the perfect recipe for you! Start up your day with an extra special bowl of vanilla overnight oats with cookie dough. I repeat: cookie dough WOW! It almost can’t get better than this for a good morning meal.

You probably already know that oats is one of my favs to eat in the morning and I love to vary with the ingredients. By adding vanilla and cookie dough balls it gives a whole new taste to it. And don’t we all just adore cookie dough?! I know it’s not the best thing to eat, but we can make it healthy very easily and we need just a few ingredients for it. I like to make a large portion of the cookie dough balls, so I can add them to multiple brekkies as topping or just enjoy as a snack 🙂 Read below how to make these yummy ones and of course the overnight oats to combine them with.

INGREDIENTS
Vanilla overnight oats:
– 125 ml unsweetened milk
– 40 g oats
– 1 tsp. vanilla powder
– 2 tbsp. low-fat quark

Cookie dough balls:
– 250 g chickpeas
– 1 tbsp. peanut butter
– 3 tbsp. honey
– 1 tsp. vanilla powder
– chocolate chips to taste

MACRONUTRIENTS

  • Energy: 926,7 kcal
  • Protein: 39,4 g
  • Carbs: 159,7 g
  • Fat: 16,3 g
  • Fiber: 25,7 g

METHOD
Vanilla overnight oats:

  1. Grab a jar and add the milk, oats and vanilla powder. Mix together with a spoon and put in the fridge for at least two hours. Or even better: an entire night while you’re having a good night sleep!

Cookie dough balls:

  1. Drain the chickpeas well and dry them off with a paper towel. Note: the peas should really be dry!
  2. Get a bowl and put in the chickpeas with the peanut butter, honey and vanilla powder. Use a hand blender to mix everything to a whole and creating a thick doughy structure.
  3. Lastly add some chocolate chips to taste and stir through the dough with a spoon.
  4. Use your hands to roll the cookie dough into small balls and put on a scale. Now put them in the fridge also for at least two hours, or let them firm up all night together with your overnight oats!

Vanilla overnight oats with cookie dough:

  1. Wakey wakey! When you wake up a yummy breakfast is waiting for you in the fridge, but we need to bring our finishing touch to it. Stir through the overnight oats and put in a breakfast bowl. Add the low fat quark and add some cookie dough balls as topping.

    De vanilla overnigh oats met de cookie dough lijkt me heerlijk, alleen was mijn vraag wat voor vanilla powder jij gebruikt? Je boek is trouwens fantastisch, ik heel wat boeken liggen over health/sport etc, maar door jou boek maak ik echt stappen vooruit naar een gezondere levenstijl!     Als ik de havermout toevoeg kom ik op veel meer calorieën uit?
    Ik denk dus dat ik iets verkeerd doe .
    Graag zou ik willen weten welke ‘oats’/havermout jij gebruikt?
